You will need a lighter on which you can control the heat and flame intensity setting, because it will be preferable to keep the lighter on a low flame. A medium flame may be acceptable, but you will have to be extremely careful to not burn the sugar. Scorched sugar does not equal a tasty dessert.

Begin the process by baking your dessert. This can be done with anything that re

Make sure you use granulated sugar, because other options like powdered sugar or brown sugar will melt away and they will not form a crust. Next, you will need to hold the torch flame about three to four inches away from the sugar depending on its intensity. Always keep the torch lighters the same distance from the sugar the whole time you are using it. As you move the lighter over the surface of the sugar, you will see the confection start to bubble and it will begin to turn a golden caramel brown. This is know when you are doing things right. Do not leave the torch flame on any one part of the sugar for too long or it will scorch.

Once the whole surface of the dessert has the golden brown look, then you will know that you are done with the process. As you can see, using torch lighters to caramelize sugar really is not that hard at all, and you will be a pro at it with just a few tries.
