Mexican breakfast: huevos rancheros
Like many of us a typical breakfast involves coffee,toast and eggs. Pretty boring and random but if you want a big breakfast, why not serve up a platter of Huevos Rancheros. This Mexican meal is still an egg dish done in a country or ranch style. It's like breakfast and lunch rolled into one tortilla.
This meal was traditionally prepared in farms; fried tortillas, eggs and chili sauce. Now, it has become a brunch favorite. Not only does it comes with re-fried beans but with practically anything you want. Some favorites include: avocado, sausages, bacon, ham, even steak, potatoes and even rice.
The eggs can be scrambled or sunny side up.
Ingredients
1 medium-sized onion, chopped
2 tablespoon olive oil
1 can tomatoes, cut to smaller pieces
3 tablespoon canned diced green chili peppers, rinsed
1 teaspoon chili powder
2 cloves garlic, minced4 pieces tortillas8 eggs3/4 cup Monterey Jack cheese , shredded
Directions
1. Heat oil in a pan and saute garlic and onions until onions become transparent
2. Add in peppers, tomatoes, and chili powder for seasoning.
3.Let it simmer for 7 minutes until it thickens.
Tortilla
4. Pre-heat oven in 350°F
5. In a baking sheet, put tortillas and brush with oil
6. Bake for 10 minutes then let it cool
Eggs (either scrambled or fried)
7. Crack each an egg at a time in the simmering sauce.
8. Let the eggs cook in the pan.
9. In a plate, lay tortilla down then add the eggs on top. garnish it with some left over sauce cheese and peppers.
